
As the year marches on, relief is well and truly here from the Queensland heat and humidity. Autumn saw us begin to move inward. Now that the winter chill is here it is time to fully embrace this movement. Even though winter in Noosa still gets its fair share of glorious days it’s so important to honour the season and move alongside its energy.


The following tea is packed with inflammation fighting spices, will help improve your digestion and boost your immune system. It’s packed with antioxidant properties.
CHAI TEA SPICE MIX
Ideally one would use the whole spices and grind them with a coffee grinder or mortar and pestle. However, you still get all the benefits using pre-ground spices.
- 2 tsp whole black peppercorns (1/2 tbsp ground)
- 2 cinnamon sticks (2 tbsp ground)
- 2 tbsp ground ginger
- 1 tsp ground tumeric
- 6 cardamom pods (1 tbsp ground)
- 10 whole cloves (1 tbsp ground)
- 1 whole nutmeg (1/2 tbsp ground)
- Grind the spices then sift with a fine-mesh sifter and return any large pieces of spice to the grinder to powder them further (Skip this step if you are using pre-ground spices).
- Combine the ground spices in a jar and mix well.
How to make chai tea
- 1/2 teaspoon of chai masala mixture, above
- 1/2 cup water
- 1/2 cup milk of choice (coconut milk is especially nice)
- 2 teaspoons black tea, such as Ceylon or Assam
- Sweetener of choice to taste (we love raw honey)
- Bring the water, milk, spice mixture, and tea to a slow simmer. Cover and remove from the heat. Allow to steep for 5 minutes.
- Strain carefully into a cup and sweeten to taste
